First welcome back, glad to be still cooking in 2012. The seasoning is starting to change so I wanted to work with some ingredients that would be fun and simple. Our first choice was Mussels,PEI blue mussels. White wine,garlic,tomato,Cayenne and fresh parsley. I made a fresh pasta dough and decided to use Annatto. A spice that can be used to color food. CHEF PLATES!
This is a dish I put together real quick, it is pork with marinated peaches with a few green peas, rum raisins and a little sauce. I made this because someone challenged me to plate something in a french style.It's called a Napoleon I marinated the peaches sous vide with a little vanilla and cinnamon with red pepper.Enjoy!

CARNITAS!!!
Yeah I said it! I made this just because I saw Rick Bayless do it on TV and I thought it was kind of cool. Of course it is pulled pork that I made into a Terrine. I put a little GUAC and Black Beans with it, but i am working on a better plating idea for next time, but for now the technique worked out great.
